Low Fat Prune-Honey Quickbread

INGREDIENTS

1/2 pk Scramblers egg substitute.
1 ts Vanilla
1 ts Baking soda.
1 1/2 cup (12 ounce box)
Pitted
Prunes, cut up.
1 c Boiling water.
1/2 c Honey.
1 1/4 c Flour.
2/3 c Sugar.
3/4 c Walnuts, chopped
An oiled and floured
Glass loaf pan.
Makes one 13"x4"x2" loaf

INSTRUCTIONS

Preheat oven to 325°F. Combine Scramblers with vanilla. To prunes, add
boiling water and baking soda and let sit 20 minutes, then add honey.
Combine this with vanilla mixture. Sift flour and sugar together and stir
it into prune mixture along with nuts, JUST UNTIL MIXED. Pour into loaf pan
and bake 40 minutes to 1 hour or until "clean knife test". Cool before
slicing.
This loaf tastes better the next day.
