Low-Fat Wild Rice Picnic Salad

INGREDIENTS

2 1/2 c Cooked Wild Rice
2 c Sliced Red Grapes
8 oz Waterchestnuts; Canned, Drained, Chopped
1/4 c Lowfat Soft Tofu; Or Plain Soy Yogurt
2 tb Lowfat Mayonnaise; Or Eggless Mayonnaise
1 tb Dill Weed
1/4 c Slivered Almonds

INSTRUCTIONS

In a large bowl combine wild rice, grapes, and water chestnuts. In a
separate bowl, beat tofu or yogurt with a fork until smooth. (If the tofu
does not beat to the consistency of mayonnaise, add a few drops of water.)
Add mayonnaise and dill weed, and stir well. Pour over wild rice mixture
and mix thoroughly. Chill for several hours. Toss in almonds before
serving.
Makes 6 Serving size: 3/4 C
Calories.....150.....Fat.....4 g.....Fiber.....2.5 g.
