Lunchbox: Couscous and Chick-Pea Salad

INGREDIENTS

1 c Couscous
1/2 c Raisins
1 c Canned chick-peas, drained
4 oz Sliced ham, julienned
1/4 c Fresh parsley, chopped
3 Green onions, chopped
1 Tomato, diced
1 Sweet red pepper, diced
1 sm Zucchini, diced or 1 cup
1/2 c Olive oil – good quality
3 tb Lemon juice
1 Garlic clove, minced
3/4 ts Salt
1/2 ts Ground cumin
1/4 ts Turmeric
1 ds Hot pepper sauce

INSTRUCTIONS

In saucepan, bring 1-1/4 cup water to boil; stir in couscous and raisins.
Cover and remove from heat; let stand for 5 minutes. Fluff with fork.
In large bowl, combine couscous mixture, chick-peas, ham, parsley, onions,
tomato, red pepper and zucchini.
Whisk together oil, lemon juice, garlic, slt, cumin, turmeric and hot
pepper sauce; toss with salad until combined.
