Luscious Stuffed Lamb Shoulder

INGREDIENTS

5 lb Boned lamb shoulder
Salt & pepper
10 sl Diced raisin bread
1 Pack (8oz) diced mixed dried
Fruit
1 c Minced onion
1 c Minced celery & leaves
1 c Orange juice
2 ts Grated lemon rind
6 Thick bacon slices

INSTRUCTIONS

Wipe shoulder inside & out with paper towels. With needle & heavy
cord, sew small opening in shoulder. Sprinkle inside & out of large
opening with salt & pepper. Combine bread, fruits, onions & celery in
large mixing bowl; pour orange juice over & sprinkle with rind. Toss
with fork to mix. Put stuffing in shoulder. Set roast on rack in
shallow roasting pan; roast in 350 oven for 1 1/2 hours. Place bacon
slices over lamb; roast 45 minutes longer. NOTE: Any surplus stuffing
can be put in greased casserole, bake, covered, for last 45 minutes.
