INGREDIENTS

10 Zucchini – shredded
3 Potatoes – shredded
1 Onion – shredded
1 Tomato – diced finely
1 Green jalopeno – shredded
1 Red jalopeno-shredded
1 Red banana pepper-shredded
1 Yellow banana
Pepper-shredded
1 pk Chopped spinach – thawed and
Squeezed
2 tb Balsamic
1 Lime juiced
x Garlic-minced -lots
x Ginger-minced – lots
1 cn V-8 juice or tomato juice
1 ts Coriander
1 ts Tumeric
1/2 ts Cardomom
1/2 ts Cinnamon
x Cilantro leaves to taste – I
Use alot

INSTRUCTIONS

start with garlic and ginger-saute in some balsamic - add onion - add
jalopeno and peppers - then add potato and zucchini -as it needs liquid -
add v-8 to consistency you like.  Add spinach. Season with above spices. At
the very end throw in the cilantro leaves.
Serve on top of basmati rice with wheat berries  ( I use2 c rice to 1 c
wheat berries or bulgar wheat).  It is very hot and spicy and tastes
wonderful.
