INGREDIENTS

1 lb Mahi mahi small dice about 1/4"
1/2 c Fresh lemon juice
1/2 c Fresh lime juice
1 tb Tabasco
2 tb Kosher salt
3 5×6 tomato small dice
1 Large yellow onion small dice
1/2 Bu fresh chopped cilantro

INSTRUCTIONS

From the recipe books of Chef Sergio Verduzco:
Mix all the ingredients allow to marinate at least 1 hr. Drain off excess
juice and refrigerate. Good for 3 days maximum. Discard leftover after 3
days.
