Marinated Shrimp With Corn Salsa

INGREDIENTS

12 Shrimp
1 Lemon, zest of
4 Garlic cloves – minced
1 Serrano chili – seeded
diced
1/4 c Cilantro – chopped
2 T Olive oil
Salt and pepper

INSTRUCTIONS

Directions: Peel and devein the shrimp, leaving the tails on. In a
large bowl toss together the shrimp, zest, garlic, chili, cilantro  and
oil. Season with salt and pepper. Cover with plastic wrap and
refrigerate for one hour to marinate. To cook, either grill or use
your oven preheated to broil and allow to cook about 2 minutes per
