Milk and Honey Casserole Bread

INGREDIENTS

1 c Milk
1 tb Salt
2 pk Yeast
4 c Flour
1/2 c Shortening
2 ts Sugar
2 Eggs (lightly beaten)
1/2 c Honey
1 c Warm water
1 1/2 c Whole wheat flour

INSTRUCTIONS

Scald milk and remove from heat. Add shortening, honey and salt. Stir to
melt. Cool to lukewarm. Dissolve 2 tsp. sugar in warm water. Add yeast.
Let stand for 10 minutes. Add cooled milk mixture, eggs,whole wheat flour
and 1 cup white flour. Beat 2 minutes with mixer. With wooden spoon, add
remaining to make sticky soft dough using your hands. Let stand for 1 hour.
Punch down and turn into a 12 cup casserole or 2 smaller ones. Let rise
again 1 hour. Bake in 375 degree oven, 45 minutes for small casseroles and
1 hour for larger one. Cool on racks.
