Mincemeat Spice Cake with Egg Nog Topping

INGREDIENTS

1 pk (18.25 oz) favorite spice cake mix
1 1/4 c Water
1/3 c Vegetable oil
3 Eggs
1 pk (9 oz) None Such® condensed mincemeat, finely crumbled
1/2 c Egg nog
1 pk (1.3 oz) whipped topping mix

INSTRUCTIONS

In a large mixer bowl, combine cake mix, water, oil and eggs; beat on
medium-high speed 2 minutes. Stir in mincemeat. Pour into a greased and
floured 10-inch fluted or tube pan. Bake at 350° F 45 to 60 minutes or
until cake tests done. Cool 10 minutes; remove from pan. Cool completely.
In a small mixer bowl, combine egg nog and topping mix; beat on high speed
4 minutes or until soft peaks form. Serve topping over cake slices.
Refrigerate leftover topping.
