Mint Chocolate Meringues

INGREDIENTS

2 lg Egg whites at room temperature
1 ts Cream of tartar
3/4 c Sugar
Green food coloring
6 oz Chocolate mint chips

INSTRUCTIONS

Beat egg whites and cream of tartar until soft peaks form. Gradually add
sugar and beat until stiff. Add food coloring to desired color of green.
Lightly fold in chocolate mint chips. Drop by teaspoon full onto lined
baking sheet. Place in 350-degree oven; turn off heat. Leave in oven at
least 5 hours or overnight.
Note: for 'plain' meringues, do not add food coloring and substitute
regular chocolate chips for the mint.
