Minted Cantaloupe Dessert Soup

INGREDIENTS

6 c Cantaloupe; Cubed
3/4 c Orange Juice
3 tb Lime Juice
1/4 ts Mint Extract
2 ts Powdered Sugar
8 oz Vanilla Low-Fat Yogurt
2 tb Plain Nonfat Yogurt
Mint Sprigs; Optional

INSTRUCTIONS

Place 3 cups cantelope and next 3 ingredients in a blender; process until
smooth, stopping once to scrape down sides. Add ramining 3 cups cantaloupe;
process until smooth.
Combine the cantaloupe mixture, powdered sugar, and vanilla yogurt in a
large bowl, and stir well with a whisk.
Cover and chill. Garnish each serving with a plain yogurt swirl and a ming
sprig, if desired.
