Mixed Greens And Fruit with Mustard Dressing

INGREDIENTS

1/3 c Olive oil
1/4 c Red wine vinegar
1 tb Dijon mustard
1/2 c Chopped fresh chives or green onions
6 c Mixed baby lettuces
1 Cucumber; peeled, seeded,
; diced
1 c Diced peeled jicama
1 c Diced red bell pepper
1 c Seedless grapes
8 lg Mushrooms; sliced

INSTRUCTIONS

Whisk first 3 ingredients in small bowl until blended. Mix in chives.
Season dressing to taste with salt and pepper. (Can be prepared 2 hours
head. Let stand at room temperature.)
Combine lettuces, cucumber, jicama, bell pepper, grapes and mushrooms in
large bowl. Add dressing and toss to blend. Season with salt and pepper.
Serves 6.
