Mochi Cake

INGREDIENTS

1 lb Mochiko
2 1/2 c Sugar
2 ts Baking powder
1/2 c Butter or margarine; melted
3 c Island Fresh milk
5 Island Fresh eggs; beaten
2 ts Lemon extract
1 ts Vanilla
1 c Shredded coconut

INSTRUCTIONS

Preheat electric oven to 350  F.  Grease a 13 x 9 x 2-inch pan. In a large
bowl, combine mochiko, sugar, and baking powder. Add remaining ingredients;
mix well. Pour into prepared pan. Bake for 1 hour; cool. Makes 24 servings.
