INGREDIENTS

75 g High fibre bran, 3oz
175 g Caster sugar, 6oz
2 T Honey
50 g Dried apricots, roughly
chopped
2oz
50 g Dried cherries, 2oz
5 0 g, 2oz dried
blueberries
50 g Dried cranberries, 2oz
250 Soya milk, 8floz
175 g Self-raising flour, 6oz
25 g Each of the dried fruits
1oz

INSTRUCTIONS

Mix the cereal, sugar, honey and fruit in a bowl. Stir in the milk and
leave to soak for 1 hour.  Preheat the oven to 180 C, 350 F, Gas Mark
4.  Lightly oil a 900g (2lb) loaf tin and line the base with
greaseproof  paper.  Sift the flour over the bran mixture and fold in.
Spoon into the  prepared tin and bake for 1-1 1/2 hours or until firm
to the touch.  Remove from the oven and leave to cool in the tin, then
turn out onto  a cooling rack and leave to cool completely.  Brush the
top with honey and decorate with more fruit.  Converted by MC_Buster.
