A faith without some doubts is like a human body with no antibodies in it. People who blithely go through life too busy or indifferent to ask the hard questions about why they believe as they do will find themselves defenseless against either the experience of tragedy or the probing questions of a smart skeptic. A person's faith can collapse almost overnight if she failed over the years to listen patiently to her own doubts, which should only be discarded after long reflection.

Moonlight Cake

INGREDIENTS

10 Egg whites
7 Egg yolks
1 ts Cream of tartar
1/2 ts Salt
1 1/2 c Sugar
1 c Cake flour
1 1/2 ts Lemon extract

INSTRUCTIONS

Sift flour before measuring, then sift five times. Sift sugar five times.
Add salt to egg whites, beat until frothy, then add cream of tartar.
Continue beating, until egg whites are stiff but not dry. In another bowl,
beat 7 egg yolks until creamy. Add to them, 2 tbsp beaten egg whites. To
whites, gradually add sugar. Combine yellow and white mixtures. Fold in
flavoring, flour. Rinse 4 1/2 x 10" tube pan with cold water before putting
in batter. Bake in preheated 325 degree oven for 60 to 65 minutes or until
done.
