INGREDIENTS

6 Eggs
2 c Milk
1 tb Oil
Salt
1/2 c All-purpose flour
1/2 c Pastry flour
1/4 ts Vanilla extract
2 tb Sugar

INSTRUCTIONS

Beat eggs, milk, oil and pinch of salt in bowl. Add all-purpose flour and
pastry flour and mix well. Add vanilla and sugar and mix well. Pour 1/3 cup
batter per cake onto greased skillet and cook over medium heat until golden
brown, 3 to 4 minutes. Turn and cook until golden brown on other side, 2 to
3 minutes. Yields 10 to 12 cakes.
Each of 12 cakes: 109 calories; 72 mg sodium; 109 mg cholesterol; 5 grams
fat; 12 grams carbohydrates; 5 grams protein; 0.02 gram fiber
