My Favorite Blueberry Muffins

INGREDIENTS

2 1/2 c Flour
1/2 c Sugar
3 1/4 ts Baking Powder
1/8 ts Salt
1/4 c Shortening
1/4 c Unsweetened Applesauce
1 Egg; (lightly beaten) or 1/4 Cup Egg Substitute
1 1/4 c Skim or Low Fat Milk
1 c Maine Wild Blueberries; ** sprinkled w/ 1 Tbsp. Flour

INSTRUCTIONS

Preheat oven to 450. Grease muffin tins. Mix dry ingredients together, cut
in shortening. Add applesauce, egg, and milk. Stir just until moistened.
Lightly stir in blueberries. Fill muffin tin half way and bake at 450 for
12 to 15 minutes. **If you use high bush or any other type of blueberry you
may want to add a bit more sugar, as they are not as sweet.
