Nanny’s Scalloped Tomatoes

INGREDIENTS

3 tb Butter
1 Green Pepper cut into half rings
1 md Spanish Onion cut into half rings
1 1/2 c Dry Bread Crumbs
6 Ripe Tomatoes, sliced
1 1/2 ts Salt
3/4 ts Pepper

INSTRUCTIONS

Preheat oven to 325 degrees. Lightly butter a baking dish. Melt 2 Tbsp. of
Butter in a skillet. Saute' the green pepper and onion rings until soft.
Sprinkle the baking dish with 1/4 of the bread crumbs. Cover with 1/3 of
the tomato slices. Cover with 1/3 of the sauteed pepper and onion rings.
Season with salt and pepper. Make 3 layers. Dot with remaining 1 Tbsp of
Butter. Bake for 45 to 60 minutes.
This is especially good made with ripe tomatoes fresh from the back yard
garden! Enjoy!
