Old-Fashioned Molasses Yam Cookies

INGREDIENTS

1 1/2 c Mashed cooked yams; (about 2 medium yams = 1-1/2 cups)
1 3/4 c Unsifted flour
1/2 ts Salt
1/2 ts Soda
1 ts Cinnamon
1/4 ts Cloves
1 Orange rind; grated
2/3 c Butter
1/2 c Sugar
1/2 c Molasses
1/2 c Chopped nuts
Additional nut pieces

INSTRUCTIONS

To prepare yams, bake at 350 for 40 minutes or cook in boiling water to
cover 25 minutes until soft. Cool, peel and mash. Mix flour, salt, soda,
cinnamon, cloves and orange rind. Melt butter in large saucepan; stir in
yams, sugar, molasses and chopped nuts. Blend in flour mixture. Cover and
chill 1-1/2 hours. Drop rounded teaspoons of dough onto ungreased baking
sheet; flatten slightly with back of spoon. Press a nut piece in center of
each cookie. Bake at 350 for 10 minutes. Remove from sheet and cool on
racks. Makes 6 dozen.
