INGREDIENTS

2 Eggs
1 c Sugar
1 ts Vanilla
1/3 c All-purpose flour
1 tb Baking powder
1/8 ts Salt
2 c Apples, peeled and chopped
1/2 c Walnuts, chopped
Unsweetened whipped cream
Poached apple slices

INSTRUCTIONS

In large mixer bowl, beat together eggs, sugar, and vanilla until light and
fluffy. Stir together flour, baking powder, and salt. Blend into creamed
mixture. Fold in apple and walnuts. Turn into greased and floured 9x9x2"
baking pan. Bake in 325F oven 30-35 min. Spoon into dessert dishes. Serve
warm with whipped cream and apple slices.
Serves 6-8.
