The idea of election goes back to Abraham (Gen. 12:1-3). God chose to make a nation of that patriarch’s descendants. He chose Israel to be his people. He worked his purposes out through that one nation and in due course sent his Messiah as a Jew. After that, God continued to choose, or elect, people in accordance with his purpose (Rom. 9:11), grace (Rom. 11:5), love (1 Thes. 1:4), and foreknowledge (1 Pet. 1:2). The “elect” can rely on God’s concern for them (Luke 18:7) and on their sure salvation (Rom. 8:33). They are to live lives befitting their status (Col. 3:12-14). Mystery is inherent in the concept of election, because we also know that God desires the salvation of all persons (1 Tim. 2:4).

Pan-fried Moi With Black Bean Cake And Crispy Plantain

INGREDIENTS

2 c Black turtle beans, cooked
and
Roughly ground
1/2 c Seeded, diced tomatoes
1/4 c Chopped cilantro
2 T Cumin
2 T Ancho chili powder
2 T Minced garlic
6 T Vegetable oil
4 Moi fillets, skin on pin
bones removed
or substitute English sole
1 Firm plantain, peeled and
Sliced very thin
Peanut oil, for deep-frying
Salt, to taste
Freshly-ground black pepper
to taste
Cilantro sprigs, for garnish

INSTRUCTIONS

In a medium-size mixing bowl mix the beans, tomato, cilantro, cumin,
ancho chili powder, garlic and salt and pepper. Mix thoroughly and
form into 4 even-sized cakes. In a medium-size teflon saute pan heat  a
small amount of vegetable oil and brown off both sides and keep  warm
in the oven until the Moi is done. In the same saute pan, heat a
little more oil and saute the Moi, skin-side down first. Deep-fry the
plantain slices, season with salt and set aside. Serve the Moi with
the black bean cakes and garnish with fried plantains and cilantro.
