INGREDIENTS

1 tb Vegetable oil
1 Onion; coarsely chopped
1 Sweet green pepper; coarsely chopped
3 Cloves garlic; finely chopped
1 lb Lean ground beef
1/4 c Canned tomato sauce
1/4 c Sliced stuffed green olives
1/4 c Dark seedless raisins
1 tb Capers
2 tb Distilled white vinegar
1/4 ts Sugar
1 ts Salt
1/2 ts Black pepper
1 Jar (6 ounces) pimientos; drained and sliced
6 sl French bread; fried in oil (optional)
2 minutes more.

INSTRUCTIONS

1. Heat oil in large skillet over medium heat. Add onion and green -
pepper; saute until onion is translucent, about 3 minutes. Add garlic; cook
2. Add beef, breaking up with wooden spoon. Add tomato sauce, olives,
raisins, capers, vinegar, sugar, salt, pepper and pimiento. Reduce heat to
low. Simmer covered 20 minutes or until thickened. Serve with fried French
bread or rice garnished with avocado if you wish.
Nutrient Value Per Serving: 323 calories, 20 g protein, 14 g fat, 30 g
carbohydrate, 1,247 mg sodium, 51 mg cholesterol. Exchanges:1 1/5
starch/bread, 2 1/4 meat, 1/3 fruit, 1 vegetable, 1 1/3 fat.
