Pineapple-cranberry Sauce

INGREDIENTS

1 Bag, 12 ounces fresh or
thawed frozen cranberries
1 8 ounces juice-packed
crushed pineapple or
chunks
1 c Sugar
1/4 c Fresh orange juice
1 t Grated orange rind
2 t Vanilla

INSTRUCTIONS

canberries, pineapple with juice, 3/4 cup sugar and orange  juice in a
food processor or blender. Pulse to coarsely chop. Turn  mixture into a
medium-size nonaluminum saucepan. Bring to boiling  over medium heat.
Lower heat; simmer, stirring occasionally, until  thickened, 10 to 12
minutes. Add remaining 1/4 cup sugar. Remove from  heat. Stir in rind
and vanilla. Transfer to a small non-aluminum  container; cool to room
temperature. Refrigerate to chill.  Nutritional Information: (per
