Pineapple Party Cake

INGREDIENTS

1 pk (4-serving size) Jell-O Brand gelatin; orange flavor
3/4 c Boiling water
1 cn (8-oz) crushed pineapple in juice; undrained
1 1/2 c Ice cubes
2 Baked 9-inch yellow or white cake layers; cooled
8 oz Cool Whip whipped topping; thawed

INSTRUCTIONS

DISSOLVE gelatin in boiling water.  Add pineapple and ice cubes. Stir
until gelatin begins to thicken, 3 to 5 minutes. Remove any unmelted ice.
Chill until thickened.
SPOON 1 cup thickened gelatin over each cake layer; chill about 15
minutes.
FOLD whipped topping into remaining gelatin mixture. (If mixture becomes
too thick, add milk until frosting is of desired consistency.)
PLACE 1 cake layer, gelatin side up, on serving plate. Top with second
cake layer, gelatin side up. Frost sides and about 1 inch around top edge
of cake with whipped topping mixture. Chill until ready to serve.
MAKES 12 servings, Prep time: 30 minutes, Chill time: 1 hour
