INGREDIENTS

1 c Poha; (flattened or beaten
; rice)
1 lg Onion chopped
4 Green chillies halved
1 ts Lemon juice
1/4 ts Sugar
1 tb Grated coconut
1 tb Peanut crushed
1/2 ts Cumin & mustard seeds
1 tb Oil
Salt to taste

INSTRUCTIONS

Wash poha gently till the water drained is clear.
Drain the water and keep aside for 10 minutes.
Loosen the poha gently with fingers and sprinkle some water.
Keep aside for 10 more minutes and loosen again.
Add the peanut powder, salt, sugar, turmeric, lemon juice and mix well.
Heat oil, add seeds to splutter. Add onion, potatoes and chillies.
Stir fry till the potato is tender.
Add the mixed poha, and stir gently, with a wide spatula.
Cover and cook on low for 3-4 minutes, stirring in between.
Mix in the coconut and chopped coriander.
Serve hot with steaming hot filtered coffee or tea.
Making time: 10 minutes (excluding soaking time)
Makes: 2 servings.
