Pommes De Terre Boulangere (potatoes With Onions)

INGREDIENTS

2 lb Potatoes or 6-8 med sized
2 Onions
1/2 t Salt
Pepper
1 t Parsley
1 t Thyme
3 T Butter or marg
1 c Boiling water

INSTRUCTIONS

Preheat oven to 425F. Peel and cut potatoes into 1/4 inch slices.
Slice onions very thin. Toss in a bowl with salt, dash of pepper,
finely chopped parsley and thyme.  Lightly grease a LARGE shallow  pan.
Place mixture in pan (mixture s/b about 1 inch thick). Pour  melted
butter over top, then pour boiling water over top. Bake for at  least
40 minutes or until the potatoes are tender, the water has  cooked away
and the top is a nicely browned.  Suggest serving with lamb.  Portions:
