Pork Chops Niçoise

INGREDIENTS

2 ts Olive oil
4 3-ounce lean pork chops
2 3/4 lg Tomatoes; chopped
2 Cloves garlic; minced
3/4 lg Green bell pepper; chopped
3/4 ts Dried basil
1/3 c Black olives
1 1/3 c Cooked rice; hot

INSTRUCTIONS

In a large skillet, heat oil over medium heat. Add pork chops and lightly
brown on both sides. Add the tomatoes, garlic, pepper and basil; cover.
Simmer 25-30 minutes, turning pork chops once. Add the olives and continue
to simmer over low heat 7-10 minutes. Arrange rice on a serving platter,
place pork chops over rice, spoon sauce over the top and serve.
Per serving: calories 372, fat 14.2g, 34% calories from fat, cholesterol
67mg, protein 26.0g, carbohydrates 36.3g, fiber 5.1g, sodium 182mg.
