Pork Roast with Sauerkraut, P K

INGREDIENTS

3 lb Pork roast
1 qt Sauerkraut; fresh or in a jar
2 sm Apple; quartered
2 sm Onions; quartered
3/4 c Packed brown sugar
Salt; to taste
Pepper; to taste

INSTRUCTIONS

Place pork in a roaster and baked covered at 300 degrees untill almost
done, about 2 1/2 hours.
Drain and rinse the sauerkraut and seaon to taste. Quartered the apples and
the onions. When roast is nearly done, drain the fat off and cover the
roast with the sauerkraut. Sprinke the brown sugar over top.
Then place the apples and onions pieces alternately apart over the roast
and on the sides. Turn over up to 400 degrees and place the roast uncovered
in center of oven. .Bake for aobout 20 minutes or until apples and onions
are tenderand the pork is done.
Serving Ideas : Buttered boiled potatoes.
NOTES : I use a pork loin roast for this dish. If I don't have fresh
saurekraut I will use Claussen in a jar in the refrigerated section of the
store.
