Pork with Mustard And Quark

INGREDIENTS

1 tb Olive oil
454 g Pork fillet; sliced (1lb)
2 Cloves garlic; crushed
4 Salad onions; chopped
125 g Button mushrooms; quartered (4oz)
2 tb German mustard
1 200 gram car quark
2 tb Freshly chopped thyme
2 tb Freshly chopped parsley
Salt and freshly ground black pepper
2 ts Cornflour blended with
1 tb Water

INSTRUCTIONS

1. Heat the oil, add the pork and garlic and cook for 4-5 minutes until
browned.
2. Add the onions and mushrooms and cook for a further 3-4 minutes.
3. Stir in the mustard, quark , thyme, half the parsley seasoning and
blended cornflour. Cook for a further 2-3 minutes.
4. Spoon into a serving dish and sprinkle with the remaining parsley.

served with crisp jacket potatoes and seasonal vegetables.
