INGREDIENTS

1/2 lb Green beans, * see note
2 Potatoes, ** see note
2 Scallions, sliced
dressing-
2 T Olive oil
2 T White wine vinegar
1 Clove, crushed
1 Red onion, sliced thin into
1/2 t Oregano
1/2 t Salt
1/8 t Pepper

INSTRUCTIONS

cut into 2-inch lengths, steamed ** cooked until just soft, peeled,
cubed  Combine beans, potatoes, and scallions.  In a separate bowl,
combine  remaining ingredients and pour over salad.  Recipes sent to me
