INGREDIENTS

4 c Flour
1/2 ts Baking soda
1 ts Baking powder
1 ts Salt
3/4 c Margarine
2 Eggs
1/2 c Milk
1 3/4 c Prune jam; (or thick filling of choice) (up to 2)
1 Egg yolk mixed with:
1 tb Water
Powdered sugar

INSTRUCTIONS

Preheat the oven to 375 degrees. In a large bowl, sift together the flour,
baking soda, baking powder and salt. Cut in the margarine using a pastry
blender or knives. Add eggs and milk; mix thoroughly to form a dough.
Divide the dough into quarters. On a lightly floured work surface, roll out
each quarter of dough to about a 10-by-10 inch square 1/8 inch to 1/4 inch
thick. Cut dough into about sixteen 2 1/2-by-2 1/2-inch squares. Place 1
scant teaspoon of the prune jam or other thick filling in the center of
each square. Bring the 4 corners together and pinch to seal.
Brush the Prune Pillows with the egg/water mixture. Place on a greased
baking sheet and bake for 10 to 15 minutes or until brown.
Remove from the oven and cool on a wire rack. When cool, sprinkle with
powdered sugar.
