INGREDIENTS

2 c Cooked white rice
1/2 c Chopped fresh cilantro
1 cn Spam luncheon meat; (12 oz)
1 lg Onion; chopped
2 c Shredded Monterey jack cheese
1/2 c Whipping cream
1 tb Vegetable oil
Warm tortillas

INSTRUCTIONS

In a medium bowl, combine rice and cilantro; set aside. In a large skillet
over medium-high heat, cook Spam and onion 7 to 10 minutes or until lightly
browned.
Meanwhile, in 2-quart saucepan over low heat, combine cheese, cream and
oil. Cook, stirring occasionally, until cheese is melted. Place rice in
center of plate; drizzle with cheese sauce. Place Spam mixture around the
rice. Serve with warm tortillas.
This recipe yields 4 servings.
