Quick Creole Gumbo

INGREDIENTS

1 tb Olive oil or vegetable oil
1 md Onion; diced
1 Each: small red and green bell pepper, diced
4 oz Chicken andouille sausage; sliced
1 cn (14 1/2 ounces) diced tomatoes
2 cn (14 1/2 ounces each) chicken broth
1/2 c Instant rice
1 ts Creole seasoning blend (up to 2)
1/4 ts Each; or to taste: red and black pepper
Salt to taste
1/2 lb Cooked frozen medium shrimp

INSTRUCTIONS

Preparation time: 15 minutes Cooking time: 10 minutes Yield: 4 servings
1. Heat oil in a large saucepan over medium-high heat. Add onion, bell
peppers and sausage. Cook, stirring often, until sausage begins to brown, 4
to 5 minutes.
2. Add tomatoes with their liquid, broth, rice and seasonings. Heat to
boil; reduce heat and simmer 5 minutes, adding shrimp about halfway
through. Adjust seasoning and serve hot.
