Roasted Baby Marrow with Cheese Crust

INGREDIENTS

1 tb Olive oil
50 g Cream cheese; (2oz)
25 g White breadcrumbs; (1oz)
50 g Mature Cheddar cheese; grated (2oz)
Salt and freshly ground black pepper

INSTRUCTIONS

Preheat the oven to 180 C, 350 F, Gas Mark 4.
Trim each end of the marrows, place on a baking tray, drizzle with olive
oil and bake for 45-50 minutes.
Slice the top off each marrow, lengthways, removing only 5mm ( 1/4 inch).
Scoop out another 5mm ( 1/4 inch) of the flesh, and spread each marrow with
the cream cheese.
Mix the breadcrumbs and Cheddar cheese, spinkle on top of the cream cheese
and return to the oven for 10-15 minutes until the cheese and breadcrumbs
go golden and crispy.
