Dairy Vegetarian Cabbage, Cheese 3 Servings

INGREDIENTS

3 Baking potaotes
1/2 Dm yellow turnips
4 tb Oil or margarine
1 Onion; chopped
1/2 sm Cabbage; shredded
2 ts Cider vinegar
1/2 c Grated Cheddar cheese; (or soy cheese)

INSTRUCTIONS

Cut potatoes and turnip into even sized chunks. Place in a pot with enough
cold water to cover and bring to a boil. Boil for 10-15 minutes or until
vegetables are tender. Drain will. Place in a large bowl and mash with a
potato masher. The mixture should be chunky. Heat 2 Tbsps. oil or margarine
in a frypan. Add onions and saute until soft, about 2 minutes. Stir in
cabbe and continue to saute until just tender, about 5 minutes. Scrape
contents of skillet into the potaot turnip mixture. Stir together, adding
vinegarand remaining 2 Tbsps. oil. Season well with salt and pepper. Pile
into a baking dish and sprinkle with grated cheese. Bake at 400° for 20
minutes or until top is brown and crusty. MC formatting and posted on by
