3 tb Red wine vinegar
1 tb Dijon mustard
1 ts Anchovy paste
1/2 ts Dried thyme; crumbled
Salt; to taste
Freshly-ground black pepper; to taste
1/3 c Olive oil
=== SALAD ===
1 c Green beans; trimmed, and
Cut 2" lengths; blanched
2 sm Red potatoes; boiled, sliced
1/2 Boston lettuce head; leaves washed
And dried
3 Cherry tomatoes; halved
6 oz Tuna; seared
=== GARNISH ===
Nicoise olives
Capers

INSTRUCTIONS

In a bowl, whisk together vinegar, mustard, anchovy paste, thyme, salt and
pepper to taste. Add the oil in a stream, whisking, and whisk until the
dressing is emulsified. In a bowl, toss the beans and potatoes with enough
dressing to lightly coat. On a plate, arrange the lettuce, tomatoes, beans
and potatoes, and tuna. Drizzle with more dressing and garnish with
optional olives and capers. This recipe yields ?? servings.
