Salmon Steaks with Dill Butter

INGREDIENTS

2 Salmon steaks; about 1 inch at
; their thickest part
2 tb Chopped fresh dill fronds
2 oz Softened butter
4 tb Dry white wine
Salt and feshly ground black pepper

INSTRUCTIONS

Lay each salmon steak on a piece of foil or baking parchment large enough
to wrap it up. Mix together the herbs and butter and spread over the pieces
of fish. Season with salt and pepper. Tip the wine over the salmon and
quickly close the foil or parchment to make a parcel. Bake in a preheated
oven at 220ºC/425ºF/gas mark 7 for 12-15 minuts. Serve with boiled unpeeled
potatoes and a green vegetable.
