Sandwich Cheese Bake

INGREDIENTS

8 sl White or whole-wheat bread
1 tb Prepared mustard
10 sl American cheese (about 5 ounces) or other; regular or low-fat cheese
4 lg Eggs
2 c Milk; whole or low-fat
1 ts Salt

INSTRUCTIONS

1. Lightly grease an 8x8x2-inch baking pan or dish.
2. Make 4 sandwiches, using some of the mustard and 2 slices cheese for
each. Place side by side in prepared pan.
3. With a fork, beat eggs, milk and salt in a bowl until blended. Pour over
sandwiches.
4. Cut remaining 2 slices cheese in half diagonally. Put 1 piece on top of
each sandwich. Cover and refrigerate 2 hours or up to 24.
5. Heat oven to 350 F. Bake sandwiches uncovered 40 minutes, until puffed
and golden brown. Let stand 10 minutes before cutting and serving.
* Serves 4. Per serving: 423 cal, 22 g pro, 31 g car, 23 g fat, 264 mg
chol, 1,483 mg sod. Exchanges: 1 3/4 starch/bread, 2 lean meat, 1/2
dairy/skim milk, 2 1/2 fat
