Sara’s Cajun Fish Fillets

INGREDIENTS

4 White fish fillets – (6 oz ea); such as
Lemon sole
Milk; for soaking
4 tb Olive oil
Flour for dredging; seasoned with
Cayenne pepper; paprika, dried thyme,
White and black pepper; and salt

INSTRUCTIONS

* Note: See the "Pickled Onion" and "Sara's Remoulade" recipes which are
included in this collection.
In a shallow baking dish, soak the fish in milk for about 10 minutes. In a
heavy saute pan heat the olive oil over medium-high heat until it is hot
but not smoking. Remove the fish from the milk and dredge it in the
seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it
just flakes. Serve immediately. This recipe yields 4 servings.
