INGREDIENTS

4 tb Sunflower oil
225 g Raw shelled peanuts
2 Cloves garlic; crushed
4 Shallots; peeled and chopped
1/4 ts Chilli powder
1/4 ts Light muscavado sugar
1 tb Dark soy sauce
2 tb Chilli sauce
1/2 Lime; juice of

INSTRUCTIONS

1 Heat the oil in a large pan or wok and stir-fry the peanuts for 3-4
minutes until golden. Drain off the oil, reserving 1 tbsp. Blend or grind
the peanuts.
2 Crush the shallots and garlic with the reserved oil for about a minute.
Add the chilli powder, sugar, soy sauce and 450ml/11 fl oz water to the
pan. Bring to the boil and then stir in the peanuts.
3 Simmer gently, stirring occasionally for 10 minutes, until the sauce has
thickened. Add the lime juice. Season as desired. Serve with the kebabs.
