Sauteed Abalone

INGREDIENTS

1 lb Abalone
1 Egg; slightly beaten
2 ts Milk
3/4 c Sifted seasoned dry bread crumbs
2 tb Vegetable oil

INSTRUCTIONS

Recipe by: Joy of Cooking Cut the abalone into 3/8-inch-thick steaks
accross the grain and pound to tenderize Mix the egg and milk and beat
slightly. Place mixture in a shallow plate.  In second plate place the
bread crumbs.  Dip the abalone in the egg wash and then coat in the bread
crumbs. When the oil is hot saute the abalone steaks for about 1 1/2 to 2
minutes on each side.
