Savory Turkey Meatloaf Florentine

INGREDIENTS

1 1/2 lb Ground turkey
1/2 c Cream of Wheat
1/2 c Egg substitute
1/2 c Ketchup
1 Clove garlic, minced
1 ts Dried basil leaves
1 pk (10 oz) chopped spinach, thawed, drained
1/2 c Chopped red pepper
1/4 c Minced onion
1 tb Country-style Dijon mustard
1 tb Honey

INSTRUCTIONS

In large bowl, thoroughly combine turkey, cereal, egg substitute, ketchup,
garlic and basil. Stir in spinach, pepper and onion. Shape into 9x4-inch
loaf. Place in greased 13x9x2-inch baking pan. Bake at 350° for 45 minutes.
Blend mustard and honey; brush over meatloaf. Bake 15-25 minutes more or
until internal temperature reaches 165°. Let stand 10 minutes before
slicing.
