There's a limit to God's patience

Sbanikh Bir-riz (spinach With Rice)

INGREDIENTS

1 Onion, chopped
2 T Oil
1 Fresh Spinach, chopped OR
1 Frozen, thawed and
Squeezed-out
1 1/4 c Water
Salt and pepper, to taste
1/2 c Uncooked rice
1/2 lb Ground turkey or ground beef
Optional

INSTRUCTIONS

Saute onions with seasonings in oil until lightly brown.  If using
ground meat, add to skillet and cook until no longer pink. Wash
spinach and cut coarsely.  Add spinach to skillet, cover and cook
until spinach is slightly limp.  Add water and rice.  Do Not Stir.
Cook for 10 mins on med-high heat or until it comes to a boil.  Then
lower heat and simmer for approx. 20 mins.  To serve, place a platter
on top of pan turning upside-down. Let stand a few mins. to settle.
This will be in layers. I like to add tomato sauce about 10 mins.
