Scallops and Snow Peas

INGREDIENTS

PHILLY INQUIRER—–
2 tb BUTTER
1/2 lb Sea scallops
1 ts Grated gingerroot
1 tb Fresh lemon juice
1 md Red jalapeno pepper
1/2 ts Balsamic vinegar
Seeded and minced
1 tb Minced scallion
4 oz Trimmed snow peas — about
Salt to taste
1 1/2 Cups
Fresh ground pepper to
Taste

INSTRUCTIONS

Heat butter in large skillet.Add gingerroot and jalapeno pepper and saute
over medium heat 1 to 2 minutes.Do not allow to burn.Add snow peas and
saute until they glisten,2 to 3 minutes... Add scallops and saute over
medium high heat until cooked through,turning over once,5 to 7 minutes.Add
lemon juice,vinegar and scallion.Season with salt and pepper.Cook over high
heat until mixture is hot and flavors blend,about 1 minute.Makes 2
servings....
