Scrambled Tofu

INGREDIENTS

4 oz Medium; firm or soft or firm silken tofu
1 tb Nutritional yeast flakes
1 tb Water
1/2 tb Light miso or 1/2 teaspoon Soy sauce
1/8 ts Turmeric and onion powder
1 pn Garlic powder
Salt and pepper to taste

INSTRUCTIONS

Crumble tofu coarsely. Sprinkle in yeast flakes; stir to coat. Set aside.
In a separate bowl, whisk all remaining ingredients. Set aside. Heat
skillet over high heat. Pour in tofu mix, then add miso mix. Scrape and
turn with a flat spatula until mix has turned a nice shade of scrambled-egg
yellow and is heated through.
*Optional - saute 1/2 c. fresh mushrooms, 1/2 small onion (sliced) and 2
Tblspns diced red or green pepper. Add l Tbsp. water at a time as
necessary. Serves 1
