Seafood Au Gratin

INGREDIENTS

1 tb Oil
4 Salad onions; chopped
1 Clove garlic; crushed
125 g Button mushrooms; quartered (4oz)
1 Green pepper; chopped
500 g Cod; cooked and flaked
; (1lb)
125 g Prawns; (4oz)
275 g Natural yogurt; (9oz)
1 tb Freshly chopped dill
1 tb Freshly chopped parsley
1 ts Lemon juice; up to 2
Salt and freshly ground black pepper
50 g Fresh wholemeal breadcrumbs; (2oz)
50 g Cheddar cheese; grated (2oz)
Freshley chopped parsley

INSTRUCTIONS

TO GARNISH
1. Heat the oil in a saucepan, add the onion, garlic, mushrooms and green
pepper and cook for 3-4 minutes.
2. Add the cod and prawns, cook for 3-4 minutes then stir in the natural
yogurt, herbs, lemon juice and seasoning. Cook for a further 2 minutes.
3. Transfer to a warmed ovenproof dish and sprinkle with the breadcrumbs
and cheese.
4. Place under a preheated moderate grill for 2-3 minutes, until crisp and
golden. Garnish with the parsley and serve immediately.
