INGREDIENTS

6 oz Andouille Sausage
1 c Onion; Chopped
1 c Celery; Chopped
1 c Green Pepper; Chopped
2 c Rice
1 c Shrimp
1 c Scallops
3 c Tomatoes; Diced
4 c Chicken Stock
1 tb Cajun Spice
Chopped Scallions

INSTRUCTIONS

Brown sausage, add onions, celery and peppers and cook 1 minute. Stir in
rice and the remaining ingredients. Cover and simmer for 15 - 20 minutes or
until rice is tender. Finish off with fresh chopped scallions.
Serves 8
