Shad with Sorrel

INGREDIENTS

1 lb Shad fillets, boned, skinned
Salt; to taste
White pepper; to taste
1/4 c Dry white wine
1 tb Lemon juice
1/4 c Chopped sorrel leaves
1 tb Unsalted butter

INSTRUCTIONS

PLACE SHAD IN A MEDIUM saute pan and sprinkle with salt and pepper. Add the
wine and lemon juice and sprinkle the pan with sorrel. Cover and place over
medium heat for 8 minutes. Remove the shad from the pan and keep warm on a
plate. Add the butter and cook, stirring with a wooden spoon, until
incorporated. Pour the sauce over the fish and serve immediately.
