If thankfulness does not move us to serve God, then we do not truly understand who our God is and what He has done in our behalf. Without gratitude for Christ’s sacrificial love, our duty will become nothing more than drudgery and our God nothing more than a dissatisfied boss.

Sharon’s Lentil Salsa Soup

INGREDIENTS

1 tb Olive oil
1 md Onion, finely chopped
3 Cloves garlic, finely chopped
2 md Carrots, finely diced
6 c Water
1 1/2 c Lentils
1 16-oz jar salsa, medium or hot
1 ts Salt, or to taste
Freshly ground black pepper, to taste
1 tb Lime juice
Tabasco sauce

INSTRUCTIONS

1. Heat the olive oil in a large pot. Add the onion, garlic and carrots;
saute until softened, about 10 minutes.
2. Stir in the water, lentils and salsa. Cover and bring the soup to a
boil; reduce the heat so that it bubbles without boiling too hard. Stir
occasionally. Simmer about 45 minutes, or until the lentils are tender.
3. Stir in the salt, pepper and lime juice. Adjust the seasonings and serve
with hot pepper sauce.
