Shells With Creamy Wine Sauce

INGREDIENTS

1 1/4 c Medium seashell macaroni
uncooked
1/4 c Minced onion
1/4 c Water
1/4 c Chablis or other dry white
wine
1/4 c Neufchatel cheese with
herbs and spices
Ground pepper
Vegetable cooking spray

INSTRUCTIONS

Cook pasta according to package directions, omitting the salt and fat.
Drain cooked pasta, and set aside.  Coat a saucepan with cooking spray,
and place over medium heat until  hot. Add onion; saute 2 minutes or
until tender. Add water and wine,  and cook 1 minute. Add cheese, and
cook 1 minute or until well  blended, stirring with a wire whisk. Add
pasta, tossing gently to  coat. Cook 1 minute or until thoroughly
heated, stirring constantly.  Sprinkle with pepper. Yield: 2 servings
